Oatmeal Pancake Mix - Gifts from the Kitchen

Mix:
4 cups old-fashioned oats
2 cups all-purpose flour
2 cups whole-wheat flour
1 cup packed brown sugar
1 cup instant non-fat dry milk
3 Tbl Baking Powser
2 Tbl. cinnamon
5 teas. salt
1/2 teas. cream of tarter

To make pancakes:
2 eggs
1/3 cup canola oil
2 cups pancake mix
1 cup water

Mix dry ing.; store in sealed container. Yields about 8-9 cups pancake mix.

To make pancakes: beat eggs in large bowl, gradually beat in oil. Alternately add pancake mix and water to mixture. Blend well. Preheat and oil griddle. Pour 1/3 cup batter per pancake onto griddle. Cook until bubbles form around edges, turn and continue to cook until done. Yield: About 10 pancakes.

Gift tip: For a gift, put 2 cups of dry mix into a 2-cup storage container. Decorate as desired and include recipe card of wet ingredients and how to mix pancakes.
